Meal ideas other than sandwiches

We are driving to Florida for our December trip, which is approximately 26 hours. We drive straight through, over night and don't like to stop much. (People think we're crazy but my kids are great travelers and I did this every two years when I was a kid so I'm pretty used to it.)

We plan to bring a loaf of bread, peanut butter, deli meat, cheese, fruit, crackers, and those types of things for meals. We would prefer not to eat out on the way down because we'll eat out almost every meal at Disney. We also have a couple of meals when we're at the hotel that I would prefer not to eat out. So I'm just wondering if anyone has any ideas of easy to prepare/pack/store meals other than sandwiches? I feel like there are other good ideas out there and I'm not being creative enough, lol.
 
Prepackaged Cereal cups and juice box size milks for breakfast
Fruit and veggie squeezers
Baby carrots, cucumber slices and pita with hummus
Bake some whole wheat muffins using whatever fruit you have left before you leave on vacation
 
Assuming you are taking a cooler: frozen yogurt(in tubes), muffins with PB, hummus with veggie sticks, PB with fruit to dip, jerky, cereal bars, salad packed in mason jars, apple sauce with cheese, can do a trail mix using cereal with dried fruit, overnight oatmeal

Others have mentioned fried chicken and potato salad; roll ham, cheese, cucumbers in a lettuce
 

My idea has a catch. You need to warm it. I know this makes it difficult but it is great for 'on-the-'go. Walking tacos. (Ground Beef or Chicken). Add the beef or chicken to a small bag of Doritos or corn chips that you have pre-crushed. Add lettuce, tomato and shredded cheese. maybe some Salsa packets too. Grab and go....

Ohhh my kids LOVE walking tacos. I am not sure how we can make that work in the car. But I bet the hotel rooms will have microwaves and we could have it for a meal at the hotel one night. Hmm, thanks for the idea!

I love the salad in a mason jar idea! I am a big salad eater so this would be yummy.
 
Thanks for all the ideas! I'm going to make a list and get creative! 57 days until we leave. Not that I'm counting or anything. ;)
 
We drive from NYC and love to do the same. We don't like to stop to eat out because it takes too much time. We make bacon, egg and cheese on an English muffin for breakfast. We bring individual salads and rice bowls (rice, beans, veggies and some sort of dressing all cut up in a container). We also bring string cheese, crackers, individual humus containers and pretzels and yogurts. We also bring containers of cut up fruit. Enjoy the ride - it is so much fun for us!
 
When we were in FL in April one of our favorite lunches was a taco salad.

I had made tacos for dinner one night (we were at the beach/my sisters house) and had leftover meat. So I made me a salad with the meat, lettuce, sour cream, cheese and salsa. I added tomatos to my dhs, my mom and my dds. We ate it cold, it was yummy!
 
If you have a good thermos, you can have hot food for the first day or so. Soup, obviously. But also pasta or really anything you can stuff in there. We temper our thermos by filling it with boiling water for a few minutes, then dumping the water & adding the food.
 
If you can keep food cool, but you are uncertain of a heat source...with the ages of your kids, I'd try pizza 2 ways. I'd make one of the cold veggie crescent pizzas listed online (although I'd keep the cooked crust, the creamy topping, and the veg toppings separate) and I'd make deconstructed kabobs with pepperoni, cherry tomatoes, and mozza cheese blocks. It's a "real" non-sandwich meal that they might really love (and it's not too hard to transport and prep)...
