If we choose to use ME, can we just get our luggage from baggage claim and take it with us or do we need to use their tags and services. We are flying SW and arriving at MCO around 1030pm.

Yes, if you don't use the yellow DME luggage tags, you can retrieve your own bags from baggage claim and bring them to the DME coach. The DME driver will handle your bags for you (in which case, it's customary to tip the driver). You'll need to handle your bags at your resort. If you get assistance from bell services, it's customary to tip the bellman. (Disney only pays the inbound bell service gratuity if you use the yellow tags and "magic" luggage transfers.)

The downside of retrieving your own bags is that it takes time. You're very likely to be on a later DME coach to your resort. It also takes effort and costs tip money.

Another alternative is to use DME as designed, but to request baggage delivery to your room the next morning. Then you'll just have to bring carry-ons onto the aircraft and DME coach with your overnight needs. The advantage is that you can go right from your arrival gate to the DME Welcome Center and take the first coach to your resort.
