ME earlier than actual check out day?

Hello! My mom and I are going to Disney for two weeks. She will be needing to fly home a few days before our actual check out date. Will she be able to use ME? We wont need it any other time as we are driving down together and I will drive back myself. I would be able to provide flight info, etc...

I'm sure you can do that. My DS is joining me for the first half of my next trip. He decided to do this after I had booked a solo trip. I had no difficulty adding him to my room reservation and the Magical Express. They are aware that we are arriving together but he is leaving 3 days before me. ME would not mail him his own luggage tag but they did send it to me 2 1/2 months prior to the trip. That way I had plenty of time to get it to him.

Sure - just make a one way reservation for the day she leaves.

Yes, this won't be a problem! When DD and I drove down together earlier this year, I was the only one flying home as she was staying there to work as a CM. Well, I woke up the morning I was due to come home and realized that in all the craziness of getting her down to WDW and set up and all, I had NEVER scheduled my ME pick up for my trip back!! Fortunately, I almost always fly out on the last flight of the day because I like to have as much time in FL as possible!! So it wasn't a big deal for them to even schedule a pick up for me for that day since they had most of the day's notice. I went to the front desk at like 7 or 8am and my flight was at 9pm. For some reason I am thinking that the ME reservation line said they need 5 hrs?? notice to schedule a pick up. But I could be wrong on that number.

But if you are driving and she is checking out ahead of you, I personally, wouldn't bother with it until you get there. I would just put a BIG FAT note on my email reservation letter that I printed off (I have a planning binder) to remind myself to schedule it when we checked in. It'll only take a few minutes and *I* think it is so much easier to do then when it's unusual circumstances like this, but that is just me!

No problem making Magical Express reservations for different times/strokes for different people/folks.

If your mother does not get a confirmation of her DME reservation back to the airport by the morning of the day before the day she will leave then she (perhaps with you helping her) should go to the front desk at that time to make/remake that DME reservation. She needs to get the final confirmation as soon as that sheet is available, which could be in the afternoon.
