Maya Grill menu ??

For those who have eaten at Maya Grill... what kind of steak is "shoulder beef tender" ? Seems like a silly question but I really have no idea what it is.

I dont know but we ate there last night and the menu was very different from the one on allears. I had swordfish and while good, it was a really small portion. At one time Maya was a must do for us and now not so much.
