How bad will it be during half term at the end of May?

We're going then as family in Spain could also make it at that time and we wanted to go together. Should we be prepared for high crowd levels?

Depends which dates but 29th is a national holiday and one of the busiest days if the year - lots of people take Friday off meaning pretty bug crowds right through the weekend. it's also Dutch school hols that week too.

We're going the first half, Saturday through Wednesday. Will that part be better?

Our last trip, and the only time we've taken the kids, was for Halloween last year. Will this week be that bad?

We were also there just before Halloween last year when the French schools were free. In 15 visits to Disney I have never seen the park as busy as it was then!!
 

What dates are the French school holidays? we're going 18-22 May
 
French school holidays run from April 12th to May 11th (dependent on the zone). There is a long weekend from 28th May to the 1st June so the week of the 18th May should be fine.
