Given that this is our schedule:
Can someone please (pretty please!) spell out for me when the first formal night is, when pirate night is, and when the second formal night is? And then which formal night is Lobster night (1st or 2nd)?

I know you already made your Palo reservations, but I thought I'd answer your questions a little late in case you wanted to go change anything before the Castaway Club masses go in and take everything that's left

Unless they drastically alter the Western schedule before our cruise, Formal night will be on Monday (first sea day), Semi-formal night will be on Thursday (second sea day), and Pirate night will be on Wednesday (Cozumel). The lobster should appear on the Captain's Gala menu, which is served on Semi-Formal night. Note: as strange as it seems, this is not the night of the Captain's reception (don't ask me why).
We usually try to book Palo dinner on the 3rd night of the cruise. It's Formal night, and tuxes seem to look better in Palo than they do in Parrot Cay. Plus we miss one of the rotational menus that we've had most often. We're probably going to go for brunch at Key West since we aren't leaving the ship, and tea on the last sea day.
Just a note if you haven't sailed concierge before - if there's anything else you want to book (spa, wine tasting, etc), I would go book those myself as soon as you get onboard rather than go to the concierge welcome area (usually in Sessions). We've run into problems with the concierge staff trying to book things in the spa for us or not knowing all the details of extra events that Guest Services would book. Now, this was before the days of online booking, and that certainly does streamline the process, but since you get onboard first as a concierge guest anyways, I would just go do it myself and be sure. Then you can go prop your feet up, drop your bags, and meet the lovely concierge staff (who have always been absolutely terrific - don't get me wrong)!
