Making Last Minute ADRs - First time too!

I just added dining to my room-only AP reservation today! Needless to say, I am having a hard time making reservations. We are going to go to EMH at Epcot on Friday, December 11th. As I am going through the various table service restaurants I am checking for availability first at 7pm and then if that is not available I am trying for 9pm. I'm having more luck with 9pm.

This will be my very first time using the dining plan. My main (probably stupid) question is, if the system tells me that a time is available does that mean FOR SURE that that particular restaurant will still be open at that time AND that it will be open during extra magic hours? Can I trust that if it says there is an available time, the restaurant will definitely be open? Some of the times I am getting seen pretty late.

Also, are ALL entrees on the menu available for use using the DDP? Will certain entrees be marked as not available?

Also, for table service restaurants, do adults get one entree and one dessert each and kids under 10 get one appetizer and one dessert...no entree?

One last thing, if you guys can't get the particular restaurant you want, is it common practice to book a restaurant that may not be your ideal choice and then check back online daily for cancelations? Is it difficult to cancel and reschedule reservations?

If the system gives you an ADR time and allows you to make a reservation, the restaurant will be open for that time.

Most things are included on the DDP (Non alcoholic beverage, entree and desert). Usually most servers will ask you when you are first seated if you are on the dining plan. They will then tell you what is included and if there is anything that isn't. You can also find a great sticky at the top of the Dining plan board here that lists some of the exclusions.

Kids under 10 get a beverage, appetizer, entree and desert at Table Service restaurants. But it's not off the adult menu only off the kids menu.

I would make any ADR's that you can get so that you at least have something. Continue to check back daily as people cancel ADR's all the time. If you are able to pick up something you want then go back and cancel the one you don't want. CM can do it in the same phone call. But make sure you have the new ADR before canceling the old one.
