It's the opposite of your thoughts... just about everything on Disney property is covered by the
DDP, with the exceptions I noted previously. This makes it tough to decide, because there's so many choices that your head starts spinning after awhile. Especially if you show your family the menus and they pipe in what they like, which you might not like.
You can get menus from allears.net and wdwinfo.com, as well as on the Disneyworld website. You're covered for entree which usually always comes with a side, non-alcoholic beverage and dessert. At the top of this forum is the 2014 confirmed snack thread and the 2014 dining plan cost and brochure. The 2015 plan will be released before the end of the year, and info will grow as time goes on. Not everything for 2015 will be listed in 2014 because non-Disney-owned restaurants have to sign new contracts, which they don't do until year-end. But basically, if you see a snack in 2014, it'll be there in 2015. If you see a restaurant in the 1TS or 2TS category in 2014, it'll be there in 2015 as well.
