Lunch time dining reservations?

Do I really have to make dining reservations for places I want to go for lunch? I'd like to do Crystal Palace and some places in Epcot and I don't know what day we will be going to the parks on. What are the chances of us walking in and getting a table?
 
We are going to make lunch ADRs, we have a rough plan of what days we want to do where but if we don't do it we will just cancel the ADR on the day.

When we went in the summer it was packed and it was nice knowing that we had the ADR time and wouldn't have to fight getting in anywhere. I don't know what the crowds will be like in may.
 
I would really make an ADR for the Crystal Palace and any of the countries in Epcot. They are very hard to get into if you don't have an ADR. I am sure there is a slight chance you may get lucky and walk in but if you want to make sure you will be able to be seated I would do the ADR.
 
ADR's are highly recommended for TS restaurants. That being said, we are a family of 4 - which is likely quite a common number per family. If you are only 2, it might not be as difficult for a table to become available. But really, why take a chance, make an ADR
 

Ok I think I'll save myself the worry and make ADR. I can only make these at 90 days now can't I? What is the number to ring and what time do I call from the UK?
Which other places do you recommened for lunch?
And how many people can you put on a normal reservation.
