You seem to like traditional 'dinner' type things for lunch (stuffed shells, turkey and potatoes, etc.), so why not devote a weekend day to cooking up a bunch of stuff?
Clear out a section of the freezer, buy a bunch of single-portion containers and some sandwich-sized freezer ziplocks if you don't already have them, and a bunch of dinner rolls.
Take a weekend and plan a bunch of stuff you like, maybe even stuff you don't generally make for dinner (thus less leftover-y). Baked ziti, stuffed shells, buy a turkey breast and a bunch of potatoes, some ham, etc.
Then cook a whole mess of stuff all at once. If you do it at once it really doesn't take that long. If you have a big bag of potatoes, for instance, and a turkey breast and ham, you can throw the turkey breast in to bake, slice some potatoes and boil some, then make a ham-and-potato gratin with the sliced ones and put it in to bake and make mashed potatoes with the other, do gravy on the stove.
When it's done, slice the turkey and portion it with the potatoes into containers with gravy. Cut the gratin into portions. Same with a lasagna or pasta bake and shells, etc.
Take the Ziplocks and put a dinner roll in each with a saran-wrapped pat of butter. Toss it all in the freezer, labelled as to content and date.
Then you'll have options every day. You can just reach in and grab whatever you feel like, the roll and butter will defrost in time for lunch, nuke the hot thing and you're set. You can do it every couple weeks, month, whatever, and look online or in a magazine and collect recipes you want to try.
