Lunch ideas needed!

I just found out that my father, step-mother and her sister will visit next Saturday to exchange gifts with us - and they'll be here for lunch!! I need some ideas for a nice lunch (not deli meats or anything packaged) that will be fairly easy to make and everyone (including my kids) will like. Any ideas?

They live about 2 1/2 hours away and we have a bit of a strained relationship. My step-mother is severely allergic to our pets (I put them away, but it's impossible to remove all scent/hair of them) so it will be a short visit. Luckily I'm planning to bake cookies the day before, so dessert is taken care of.

HELP!!
 
How about eggplant or chicken parm? You could make it ahead of time and just cook it so it'll be hot when they arrive.

Since so many meals are big this time of year I think a crock pot of soup with a loaf of crusty bread would be a nice change.
 
Yes, soup would be great. You could serve it with plates of cheeses and veggies too.

A quiche? Our family loves them and you can make it ahead and just add the milk/egg mix last minute.

I think that's an excellent idea!
 
I was going to say quiche as well...

the soup is a great idea or how about some baked dish...like lasagna, stuffed shells or ziti...I also like to make a big pot of sauce and have meatballs and sausage so people can make sandwiches...
