What time does lunch stop? What time does dinner start?

I believe that it varies from restaurant to restaurant. Also some stop serving between meals while others keep serving.

If you call Disney Dining and ask about the specific restaurant(s) you have in mind, I'm sure they will tell you the last lunch seating.

Previous poster offers best advice. I was surprised to find out that the "end of lunch" could vary from 2:00 (Councourse Steakhouse) to 4:00 (Teppanyaki Toom).
