chocolate marshmallow fudge

Ingredients
1 2/3 cup sugar
2/3 cup fat-free evaporated milk
2 Tbsp reduced-calorie margarine
12 oz semisweet chocolate, chopped (about 1 1/2 cups)
14 large marshmallow(s)
Instructions
1. Coat an 8- x 8-inch pan with cooking spray.
2. Stir together sugar, evaporated milk and margarine. Bring to a boil in a sauce pan, reduce heat to medium-low and cook 3 minutes, stirring constantly.
3. Stir in chocolate and marshmallows. Remove from heat and stir until smooth.
4. Pour into pan and refrigerate until firm, about 2 hours. Cut into 36 squares and serve. (Leave fudge in refrigerator or freezer for a firmer consistency.)
marcia's notes: it makes pretty small pieces, but they're good for a chocolate fix. i don't really know how they compare in points to a normal piece of chocolate (hershey's or the like), so maybe it's not really worth it, but i feel better eating something that came from a ww recipe

Ingredients
2 Tbsp butter, softened
2 Tbsp canola oil
1/2 cup dark brown sugar
1 tsp vanilla extract
1/8 tsp table salt
1 large egg white(s)
3/4 cup all-purpose flour
1/4 tsp baking soda
3 oz chocolate chips, semi-sweet (about 1/2 cup)
Instructions
1. Preheat oven to 375ºF.
2. In a medium bowl, cream butter, oil and brown sugar together. Add vanilla, salt and egg white, and mix together thoroughly.
3. Mix together flour and baking soda. Add chocolate chips and stir to distribute evenly.
4. Drop rounded half-teaspoons of dough onto a nonstick baking sheet. Bake cookies for 4 to 6 minutes, then cool on a wire rack. Yields 2 cookies per serving.
marcia's notes: since the serving size was 2 cookies for 1 point, i just made 12 larger cookies instead of 24 baby ones. and they came out to a really nice size! silly me got confused when at 6 minutes, they didn't look nearly done, and my mom says "well, since you made them bigger, they'll probably take longer" duh! so i don't know the exact time they took, i just kept checking every couple of minutes. and i only ended up getting to eat a few of these. my dad and brothers had a few each. they didn't say anything about the taste till i told them it was a ww recipe, then i got a couple "oh, yeah, they weren't that sweet". oh whatever! i like them!
