Tao if I remember is self seating in the are paid for. No need to pay for upclose,,,they are all close.

Went to Germaine's Luau in Sept. 2017. It was a nice show, and they allowed guests on stage for some hula dances. The pork was outrageously good, and it was cooked underground. The moment they pulled it out, it was falling off the bone, and the smell made us salivate. I liked seeing what I was gonna eat was fresh, hot, and tender. The facilities are older, though. Not sure how this place has fared after the pandemic.

I don't think the Toa Luau seating is completely open, I believe what happens is that when you check in, they bring you to a table in the section you paid for. We were seated with another family. All the seats were good though.

If you're worried about assigned seating, I would make a whole day of it and do the Ali'i Lu'au Package (or the Super Ambassador Package) at the Polynesian Cultural Center. They come with both a lu'au itself as well as reserved seating at the HA: Breath of Life show, in addition of a full day around the center itself.
