Lowfat meals that dont cost a fortune

My dh has been put on a low fat diet which I think is good for the whole family. But I also like to make meals on Sunday for the week as I work FT. I would love a lot of recipes that incorporate healthiness but frugalness as well. Thanks!
 
Turkey meatloaf is a good make ahead. I would spice it differently from beef meatloaf, like with a splash of honey mustard or something. There are good recipes out there in allrecipes. I usually make 2, one to freeze, one to refrigerate uncooked.

Soups, soups, soups. Low fat chili made with chicken or vegetarian. Chicken noodle soup with some good crusty bread. Vegetable chowder made with skim milk.

I love baked eggplant parm. Prep it (slice, salt to sweat out the liquid, rinse of salt), bread it and bake it. Once it's cooled, put it in the fridge The day you're going to eat it, top it with sauce and cheese and pop in the oven.

Chicken or turkey pot pie. The crust isn't low fat, but the rest of it can be. I do a top crust only and unbaked it keeps in the fridge for a few days. Just pop it in the oven for 45-60 minutes on the day you're going to eat it.

For non-premade quick meals I will do a shrimp in white wine sauce over pasta.

Spaghetti pie is a goodie to search on allrecipes. Instead of all spaghetti for the "crust" I do half spaghetti and half spaghetti squash.

Beef stew in the crock pot is a stand by. Not all beef is high fat, and in moderation can be quite healthy.
 
I made some white chicken chile last week that was very budget friendly because I got all the ingredients from Aldis and it was also very healthy.

Got the recipe from The Pioneer Woman website (love her site...) but you can find white chicken chile recipes on other food sites, too.
 
My darling BF and I are dieting together so we look spiffy in our WDW pics in January and Sparkpeople.com has been an absolute dream to track food, fitness, and other healthy habits. They also have Sparkrecipes.com which is connected and will give you tons of recipes to work with as well as calculate your own. I also work full time so I rely on my crock pot a lot, but there are plenty of meals on here that you could make ahead or that don't take long to prepare the night you want to eat them. HTH!
 

I aim to cook healthy, low-fat, but tasty meals here for the 4 of us, and have tried some recipes from Skinnytaste.com. So far the chicken pot pie soup was delish, as was the baked chicken parm and Asian steak skewers. Yesterday I made the crockpot Bolognese sauce and OMG!, it was so good! I did sub 1/2 lb of ground pork for 1/2 of the ground beef, and only used 1 1/2 lbs of meat (the recipe calls for 2 lbs), added 2 minced garlic cloves to the sauteed veggies, and dried parsley (as I didn't have fresh on hand). The recipe makes A LOT of sauce, so I froze the leftovers in freezer bags for future dinners. As an aside: my sauce was not super-think as I thought it would be, but still tasted great. Next time I may add one can of unsalted tomato paste while it's cooking to thicken it up.

BTW ~ many of this Skinnytaste gal's recipes have WW points assigned to them if anyone is going that route....
 
We have grilled chicken a lot, marinated or I put rub on it. Another thing is Salsa Chicken then divide it and make Taco Soup with half and quesidas with the rest (with low carb wraps).
 
Beans. No need to fool with dried beans, unless you want. Drained and rinsed canned beans are economical and almost ready-to-eat. Low fat, too.

Greens. I'm all about the instant gratification, so I usually buy frozen. Still cheap. Non-existent fat.

Cheaper cuts of meat (chicken thighs, round steak) that you can cook in a slow cooker. Not the lowest of the low fat, but usually economical. Internet recipes abound, but be careful of the overuse of cream-of-crap soups, cheese, and sour cream.

Combining a box of thawed greens (squeezed dry), a chopped/sauteed onion, a can of drained and rinsed beans, a bit of chopped leftover meat, and maybe a sweet potato makes a mighty fine meal.

Example 1: mustard greens, black-eyed peas, onion, chopped ham/Canadian bacon, and sweet potato.

Example 2: white beans, kale, onion, handful of dried cranberries, handful of chopped cashews (a 99-cent snack size bag from Walgreens does the trick). No meat needed.

Example 3: Drained, rinsed and dried chickpeas roasted in a little olive oil until brown and crispy. Season either sweet or salty, as you wish, and snack away.

i second this! excellent website!!! her chicken adobo, chicken parm, and spinach lasagna rolls are delicious, low fat, and not expensive at all. ive tried other recipies from her site too. everything i have made has been delicious.
