Low carb veggie newbie - please help!

I LOVE eating low-carb. I feel better and I definitely get lighter!

However, I've been looking over my journal and I realize I'm not eating as many veggies as I should. I am taking a multivitamin, but I think I should be getting more nutrients from veggies.

I don't like veggies but I'm willing to LEARN to like them. Also, I have no idea what to do with most of them - which do you peel, when can you eat the seeds and when do you throw them away, how do I know when they're ripe, etc.

I do eat salad - lettuce or other common greens, cucumber slices, bell pepper, a tiny bit of shredded carrots. I also can make frozen green beans. That's it! I need more!!

What are some easy veggies for me to start with?? How do you make them / eat them - raw, with dip of some kind, cooked (how?). Should I start with frozen veggies and then move to raw?

Advice please!! I just know my WISH friends can help me with this one!!
 
I think the easiest veggies are the frozen kind in the bags! I just throw some frozen broccoli in boiling water for a few minutes til it gets soft, then drain it, put on a plate and put a slice of cheese on top! Then just melt it in the microwave for 30 seconds or so. I do the same thing with cauliflower and green beans too!

My favorite way to make green beans is to fry up some bacon, chop it up in small pieces, then put it back in the pan with the drippings along with green beans and chopped onion! Saute it all together until the onions are done! About 5 minutes.

I also like celery, cucumbers, radishes, broccoli, cauliflower, green pepper slices, etc. cut up raw and dipped in ranch dressing.
 
Start the morning with a big VEGGIE omelet. Eggs, cheese [if you choose] plus one or more of the following --- zuchinni, mushroom, onion, green peppers, red peppers --- YUM!

Green Beans with slivers of Ham --- much more beans than Ham!

Zuchinni stir fried with a little butter and onion then topped with some grated parmesan cheese

Cream of Soup --- I cook cauliflower in either chicken broth OR beef broth until VERY SOFT. Puree' the cooked cauliflower using as much of the broth necessary to get your soup base to the consistency that you like it. For an even richer base you can add some cream cheese, heavy cream or butter before you puree' the mixture. Add cooked veggies to this mix to have whatever kind of cream of soup that you desire. Top with some shredded cheddar cheese if you choose. Salt & Pepper to taste.

Mashed Cauliflower

I cook cauliflower until it is tender. For 'mashed potatoes' texture I blend well with a potatoe masher and add one or more of the following --- cream cheese, heavy cream, butter, salt, pepper.

I also enjoy them 'baked potatoe' style. For this I also cook until tender and just mash them up on my plate a bit with a fork and top with one or more of the following --- sour cream, chives, bacon, shredded cheddar cheese, salt, pepper, butter,etc --- anything that you would normally use to top a baked potatoe. Sometimes I even add Broccoli on top of it.

For both of these you can cook the cauliflower in either chicken broth or beef broth to give a little different flavor.
