Looking for side dish ideas for pork recipe

Am looking at making a pork carnitas in a crock pot recipe similar to this one:

* 3 lbs pork shoulder or pork butt
* 4 cups chicken broth, hot
* 2 tablespoons garlic powder
* 2 tablespoons onion powder
* 2 tablespoons cumin
* 1 tablespoon chili powder, medium hot
* 2 teaspoons ground coriander
* 1/2 teaspoon ground black pepper
* 1 tablespoon lime juice
* 1/4 teaspoon salt (to taste)

1. Add hot chicken broth to crock pot.
2. Add spices and lime juice to crock pot and mix well into chicken broth.
3. Add pork to crock pot.
4. Cover and cook on High for 4 to 6 hours or until most of water is reduced and a thick gravy like sauce forms.
5. Shred meat and mix into thickened cooking sauces.

Any ideas for side dishes? I know I could easily go the traditional route and add corn tortillas and black beans but wanted some other ideas. Would prefer something not terribly carb-heavy like rice but would like to hear all thoughts!

I don't know about sides, but it sounds yummy. :thumbsup2 I'll be stopping over for some. :)

Oh, and I don't think the sauce will thicken in the crockpot. ? Everything I make gets runny and I have to thicken it with a roux or cornstarch.
 
What about an avocado and tomato salad with a vinegar, oil, garlic, cilantro, pepper and lime dressing? I make it with avocados, tomatoes, black beans, corn and chopped red pepper.
Jicama and greens with the dressing is also good.
Tortilla soup might be good if you wanted something warm.
Otherwise I would do rice and beans and homemade flour tortillas.
 

Apple salsa, it goes great with carnitas. Just cut up a few of your favorite kind of apples (I like granny smith), toss with some lemon or lime juice to keep it from turning brown, and add regular salsa things like chopped peppers, onion, cilantro, even pineapple bits if you want to. Very light and refreshing with the heavy meaty taste.
 
We always have homemade hot apple cinnamon sauce and green beans with pork.
