Ingredients
5 Pounds Medium Yellow Squash
2 Eggs
1 Cup Bread Crumbs
4 Ounces Butter
1/4 Cup Sugar
2 Teaspoons Salt
2 Tablespoons Chopped Onion
Dash of Pepper
Procedure
Cut off tips of squash. Cut each squash into three or four pieces. Cook until tender. Drain in colander. Mash and add eggs, bread crumbs, butter, sugar, salt, chopped onion and pepper. Cover with a light layer of bread crumbs. Bake at 350 degrees until lightly browned. Makes approximately 10 servings.
