Looking for Cheesy Potato Casserole Recipe

The one with the shredded frozen hash browns and cheddar cheese please!!!!!! And a question, do you thaw your potatoes or put them in frozen? I have made this before but I can't find the right recipe and the potatoes just never seem to be "done" - too hard and crunchy for my taste, like they never cooked fully or something.

I am wanting to make this for easter dinner!!! Thanks
 
Here's my receipe. I don't thaw the potatoes, and I use the chopped kind, not shredded.

1 two-pound bag of southern style hash brown potatoes
1 can cream of chicken soup
2 cups sour cream
2 cups shredded cheddar cheese
1/2 cup chopped onion
salt & pepper to taste

Mix all ingredients together in a large bowl. Spread into a 13x9" pan.

Then combine:
2 cups crushed cornflakes (I place them in a ziploc bag and smash them w/a rolling pin)
1 stick melted butter

Place over the casserole mixture.

Bake at 400 for 45 minutes. You can cover the top with foil for part of the time if the cornflakes start to get too brown or burn.

another variation is to use shredded velveeta and crushed cornflakes on top with drizzled butter and I like to add the french fried onions on top too! I also prefer the shredded potatoes.
