looking for a speggetti squash recipe

I'm doing ATkins. Does anyone know of a good recipe for speggetti squash?

Hi Dee - They're pretty easy to cook. The hardest part is getting them sliced open. I ask them to do it at the grocery store for me (bat your eyes and ask nicely in the produce dept.). I've cooked them in the microwave, face down in a pan with about 1.5 inches of water for over 10 mins. On the Food Network show "Low carb and Lovin' It" he boiled each half in a pot of water. Once they're cooked, pull the strings out by scraping with a fork and then top with whatever you want. The low carb tomato sauce in the stores is pretty good. A little parmesan cheese and turkey sausage would be good too!

*I just searched www.foodnetwork.com. If you search for "low carb" then "primavera" it should bring up the low carb recipe for spaghetti squash.
 
I saw Low Carb & Loving it yesterday and there was a very good looking shrimp scampi over spagetti Squash recipe. You should be able to follow links from the show to that date on the www.foodnetwork.com website.
 
George on low carb and loving it..does great spahetti squash.

I did his alfredo sauce over it last week...it was outstanding.

Can't wait to try the sampi recipe that was on yesterday.

If you haven't seen low carb and loving it yet..it is on every sunday at noon on the food network..check it out. The recipes from the show are also on foodtv.com...so far all of them we have tried have been delicious.

We did the squash like on tv...boil in water for about 20 minutes...this all depends on the size of your squash.

Enjoy, it is the perfect pasta replacement and doesn't taste like cardboard!
 

I saw that same episode earlier in the week - that dish looked mouth-watering!!!! Let us know how it turns out. :D
 
YUM!!! Spaghetti squash is our new favorite veggie! Even my kids love it.

That scampi sounds wonderful, I may be trying that this week.
We have spaghetti squash at least once a week as our replacement for pasta.

I place the whole squash in a pot of boiling water, boil it for about twenty minutes. Makes it much easier to cut.
Pull it out, slice it, scrape the seeds. Then I use a fork to pull out the squash, placing the strands into a bowl.
A little butter, salt & pepper.

Then I top it with a low carb marinara or spaghetti sauce, mushrooms and parmesan cheese. YUMMY!
My son likes me to also toss it with shredded mozzerrella which is good also.
Sometimes I serve it as a side with some pork chops also.
