Looking for a nice resort for 2-3 night stay

I'm looking for reccommendations on a nice resort for a few nights before our cruise this summer. We are looking for something with upscale-ish accommodations but most importantly GREAT pools. My kids love to swim and I love to lounge :). We are not going to the parks and we will have a car so proximity is not an issue.

So what's out there?
 
Grand Cypress, Marriot's World Resort, Gaylord Palms...

We stayed for 2 nights last October at the Caribe Royale. Very nice hotel, nice rooms with lots of space, GREAT pool area with slide, waterfall, hot tub, etc. Beautiful 2-story fitness facility. We very much enjoyed our time at this hotel and wish we had stayed longer. We will definitely be staying at Caribe Royale again.

Our price for a 1BR unit was $125 per night plus they threw in a $50 food & beverage credit.

I agree. We live about 1 1/2 hours from WDW. This is our go to hotel when we want a nicer resort and can't get a decent pass holder rate at Disney. Standard room are small suites with 2 queens in the bedroom and a sleeper sofa in a small living room area. These rooms also have a small fridge, microwave and coffee maker. As noted the pool area is awesome! When we stayed here over Easter week, as expected the parks were a zoo, my children actually asked to stay at the pool and skip the parks on two days of our stay because they loved the pool. (*We have been AP holders for years so WDW is not as big of a deal to my spoiled kids.)

They also offer two bedroom suites. These are basically like a two bedroom apartment. They have full kitchens and a in room washer and dryer.The master bedroom has a king size bed, spa tub and shower. This bedroom is huge. The second bedroom has it's own bath and two queen beds. There is also a sleeper sofa in the living room. They are very nice and COME WITH MAID SERVICE! They even do the dishes.

There is no resort or parking fee at this resort. Be careful because a lot of offsite area hotels do charge these fees.
