Looking for a good brunch casserole with eggs and veggies

DD would like to have a family brunch to celebrate her birthday and I am looking for a brunch casserole with eggs and veggies that does not have any pork or beef products.

We have done a breakfast burrito bar the past couple of years, but she would like to have something different this year. She does not like quiche and DSIL does not eat pork or beef products. DD does not like spinach either, but loves salmon. I will do some type of fruit salad, pancakes, bacon, sausage and the egg/veggie dish. I usually would not work so hard to cater to DD, but it is her party. :lovestruc I would like to do a casserole so I can prepare it ahead of time since the pancakes will be last minute.

Anyone have a good recipe they can recommend? :goodvibes

 
I don't like "regular" quiche because it is made with swiss cheese normally. I have a quiche recipe that I love:

3 eggs
1 cup of half and half (or cream)
2 tbsp flour
1/4 tsp peper
1 tbsp mustard
whatever veges or filling you want to add (I usually put in cheddar cheese, tomatoes and broccoli)

Mix above together and pour into a pie crust (premade/frozen works fine), bake at 350 for one hour, let stand 10 minutes before cutting.

I know it's not a casserole, but since she loves salmon, what about bagels with cream cheese and smoked salmon?
