I know that during summertime the best time to see the live animals at AK is early morning...
but during winter (Dec to be exact), is early morning still best, or are they out later? we have to do AK and MGM both in one day, and can't decide whether to chance missing the animals or missing a FP on RnR, etc.

When I went in December, the animals were much more active latter in the day than they are in the Summer. I did the Safari at about noon and there were lots of animals active. Same with the Maharakah Treck.

We were just in the AK yesterday (SO SAD to be home!) and it was COLD - probably 45 degrees. We did the safari first thing and the animals were not active AT ALl - in fact, we never saw any zebras (DD's fav). I'd suggest waiting if it's cold - probably more active then...
