so the evenings meal is now an all you care to enjoy patriot platter. Are there substitutions for the dessert if you don't like toffee or caramel? Also, are there other options for vegetables instead of just corn and potatoes? My husband eats no carbs so would only be eating meat and salad.

Dinner has always been an All You Care to Eat meal. Generally speaking it is a fixed menu outside of allergy requirements. Disney is known for trying to accommodate guests so you can try asking your server if there are any other options available. At lunch the menu is a la carte which may offer more choices/flexibility for your party.

You may want to consider choosing a different restaurant. Unfortunately, except for at O'hana where they have some dishes for kids they can sub in, the menus are not very flexible at the AYCTE restaurants.
 

We ate there for dinner in March and didn't like it at all. Paid $100 for two people and felt like the food was very processed. The service was also extremely slow. We were next to a large party and our server barely paid attention to us and catered to them instead. Eventually, we just had to tell him we needed to leave to make a FP because we were sick of sitting and waiting around.
 
You can skip the Ooey Gooey Toffee Cake and ask for just the ice cream that comes with it.

Lunch has the Patriot's Platter on it if someone in your group wants it, but there is also an a la carte menu with other choices.
