If there was a sitdown restaurant in the USA part of Epcot, what would you want the menu to look like? Would you want BBQ, Fried Chicken, etc. What would you design????
Maybe it's because I live in Texas, but my first thought was of BBQ. Then I thought maybe it should be more like Liberty Tree Tavern-and that would also fit in more with the theming of the pavillion. Or perhaps, have a resturaunt that offers a menu of offerings from the different regions of the country-an offering of BBQ, something "Northwestern", something Southwestern, etc. But I still like the LTT-type best.
If I were designing the menu for a sit-down restaurant at the American Adventure, I would definitely have bbq ribs as the main course. Being from Cincinnati, I'm a rib-lover, I've been eating them all my life (when you're born in Cincy, you get 2 IV's inserted at birth, 1 for Skyline chili and 1 for Montgomery Inn bbq sauce ). I hate it that there is really no place in WDW to get a nice rack of ribs. The restaurant can be fairly upscale too, serving steak, chicken, etc, but mostly just ribs. Mmm, ribs.
I would choose ANYTHING over the fare they offer at the counter service there!!! I am so embarassed by the menu at the America pavilion!!! What impression are we making to the international tourist? Do they think we Americans eat burgers and hot dog all the time?? Disney need to get rid of this counter service joint and put in a lovely sit down resturant and show their guest we are a proud country with distinguist taste!!!
I like the idea of having different types of food based on regions of the U.S. from appetizers to dessert (considering if they made it a sit down restaurant). Here are some just off the top of my head...
From the Northeast:

Southeast:
Maryland Crab Cakes
Georgia - Peach Pie
Key Lime Pie

One of those California style cuisine types of pasta dishes
And of course apple pie!!!!! I wouldn't necessarily make THIS the menu - I'm just throwing out ideas for the fun of it. It would be eclectic like we Americans are and would offer varied choices instead of just one type of cuisine.
Chicken fried steak! yum!! Or just a good steak. The regional idea is a good one, actually.
OK...almost anything.
And Krista person...one of days I am going to get to try some skyline chili...I've got a good friend from "the greater tristate area" who has cans and cans of it in his pantry. Just waiting on the invite...should have told him that's what I wanted for my b-day earlier this year.

I'd make it Fried Chicken with Mashed Potatoes and beans...rice isn't something commonly associated with the south, though I know plenty of people eat it here (there are two boxes of white and several flavors in my pantry now)
I think they should add a soul/southern mountains style platter with cornbread, greens, beans cooked with salt pork (fatback, its called!), fried chicken with gravy, and fried potatoes, with a side of fresh cut cucumbers, tomatoes, and onions. Soul food and hillbilly food are very, very similar!
