Well that would depend on the kind of cheese used in what you call high quality mac n cheese. I see different mixtures of cheese in different restaurants so it's hard to say.
I can tell you they use a Gruyere cheese in the Les Chefs mac though. I'm guessing what you're thinking of is mostly cheddar?
To me it was very rich. Definitely a higher quality than most restuarants' mac and cheese. My daughter ate a little less than half and I gave her some of my steak to supplement.
The last time I had the Mac & Cheese in Les Chefs de France (2004!), it had Gruyere cheese in it. That is a stronger tasting and maybe smokier cheese than is typically in Mac & Cheese. My at the time four year old didn't like it. My wife and I thought it was fantastic.
