I was thinking of visiting HS during the week for 1 day at the end of April 2021. The park is only open from 9-5. Is that enough time to see the park? Would I do better going on a weekend when it will likely be more crowded but is open 8a-8p or 8a-9p?

No, hit it on the weekday during the shorter hours, unless A) you have express pass or B) you really, really want to see the Cinematic Spectacular (which has been on weekends only during the slower season).
You'll get much more done during shorter hours with fewer crowds. It is also much easier to ride Hagrids with a reasonable wait, and more pleasant to enjoy the non-ride aspects of the parks with fewer crowds.

Thanks for the tip. I usually prefer less crowds, even if we will be a bit tight. I never knew that late April was slow season. New time to visit for me.

Agree with PP. Plus, with the relatively early park closure, you can enjoy City Walk after.

Last time I was there (a while) we rode the boats from city walk to the resort and back, for no reason other than to enjoy the ride. Are the boats still running and allowing non-guests?

Thanks for the info. Looks like time to set up a mid week visit. Maybe even a Monday :)
