Cooking Lemon desserts.

This time of year I always crave lemons. I was hoping to find a nice lemon dessert for Easter..HOWEVER there is a twist. The family and I have been on a low carb, low sugar diet. I am hoping someone may have some sort of recipe to share that I can modify using splenda.

Any thoughts?
