Leftover turkey - what are you doing with it?

What have you done with your leftover turkey - besides send some home with relatives like I did.

I had a 23 lb turkey and one set of relatives cancelled at the last minute so I had 10 less people than I had planned for.

Today I put some white meal turkey slices in the crockpot with gravy and served it over leftover rolls. It was delicious. I had lots of leftover gravy and rolls also.

We put the turkey carcass in the oven to roast (not sure how long as my dad did it) and then took the roasted bones and made turkey broth - very rich and flavorful. I think Emeril is the one who gave us that suggestion.
 
If I had cooked a turkey...I would certainly make turkey chowder.

Actually - that sounds better than the leftover lasagna we have right now. Can we trade leftovers?
 
my mom makes a turkey waldorf salad and its REALLY good! she cuts up pieced of turkey, apples, grapes and celery and mixes up a little bit of mayo with curry powder and pepper and smooshes it all together! DELICIOUS!!! :hyper:
 
Since DS and I seem to have come down with this nasty flu the day after Christmas (it started on christmas day), DH was kind enough to make some cream of turkey soup for us. It was delicious and I've got enough to last me a couple of days.

Turkey Enchiladas! A family tradition!
I also make a turkey/dressing dish that I freeze in containers.
 
then I put it thru our grinder and put it in zip lock baggies in the freezer......when I need some ground up turkey for turkey salad sandwiches I take out a little.......or if after Christmas I want to have company for New Years eve or day......I make finger rolls with it......it is delicious and everyone loves them
 
Turkey pot pie and turkey soup is what I usually make.

I'd love to have the info on roasting the bones

I froze my leftover turkey, and the stock I made. Might make some soup next week. :)
