Leftover Turkey- options?

I have turkey leftover from yesterdays Sunday dinner. Generally we only have turkey on Thanksgiving but my Mom bought this one and left ALL the leftovers here. What would you do with it? Can I freeze some or will it just dry out and be inedible?

I guess I can make some bread and do hot turkey sandwiches- of course there's always turkey pie.... but other than that I am at a loss.

we do the turkey sandwiches and I also heat up the turkey with some gravy and veggies and serve over rice.

Turkey tacos... Just heat up some taco seasoning in water and add cut up turkey and warm it up. Delicious!

Make a sandwich with sliced turkey, some stuffing, cranberry and mayo. Heat up a ramekin of gravy and dip away. SO good! I call this a Pilgrim Dip.

Club sandwiches.

Any recipe that calls for cubed cooked chicken is fine for turkey!

I freeze turkey nearly every time. It doesn't necessarily dry it out, but I usually only use the thawed meat for casseroles.

I make quesidillas ( probably killed the spelling) with left over chicken and turkey

I make Tortilla Soup out of leftover turkey, replacing the chicken with turkey. We also love Turkey Pot Pie.

ETA: I also make turkey fajitas out of leftover turkey.

A few years back I saw a Rachel Ray recipe for taking leftover turkey meat, adding BBQ sauce and sticking it in the slow cooker. It was a great way to use the leftover dark meat (I used dark and white), as most of my leftover turkey recipes just call for white meat. I also liked that it didn't really taste like the same old turkey.

I've also done turkey hash, turkey soup, turkey pot pie....
