Leftover ham(no, not turkey!)

I baked a ham yesterday and have a lot leftover. I figured I'll make western omelettes tonight, but does anyone else have a good recipe for what you do with your leftover ham? Thanks!
 
Ok, we had leftover ham for a while here...

We did:

1) baked mac n cheese with ham
2) ham n chese calzones
3) scolloped potatoes with ham
4) Omelletes
5) ham casserole (with egg noodles and cheese)


I think that was it.
 
You can freeze ham too. We had so much left over, I cut off big hunks and threw it in the freezer. Did this last year and worked well. DIdn't get too tired of ham and then had a nice meal waiting when I wanted it!
 

I love ham in any bean soup. And this is a great time of year to make them, since they warm up the kitchen so well. Ham doesn't really freeze well enough to freeze it and then eat it by the slice, but it freezes well enough to put in soups. Bean soups also freeze well.
 
In addition to the ways already mentioned, we use it in:

1) lentil soup
2) ham & beans - that's green beans with potatoes, kind of a one-dish-meal
3) "Leftovers" Rice Curry
4) just plain scrambled eggs, not an omlette, with cheese & potatoes sometimes
5) New England boiled dinner (cabbage, carrots, potatoes...)
6) ham salad
