Left over turkey recipes!

I have a lot of left over turkey and I am tired of turkey and gravy, turkey sandwiches, etc. Does anyone have a good left over turkey cassarole recipe? I will go to the store to buy what I need (besides turkey) to make it. Something interesting and not too fattening.
 
Not a cassarole but very easy and good.
Turkey Chop Suey
leftover turkey cut into bite size pieces
2 cans La Choy Chop Suey veggies
1 can water chestnuts (I like lots of these)
few dashes soy sauce (to taste)

Throw everything in large skillet and heat until boiling. Thicken with a little bit of flour. Serve over rice. I also like to sprinkle chow mein noodles over the top.

I made a really good turkey noodle soup and froze some. I found a ton of recipes on the internet.

Honestly, if you still have turkey from Christmas, I wouldn't eat it. :sick:
 

I like to make turkey pot pie. Of course the crust may not meat your low fat requirements! I load the shell with turkey, put in cooked carrots, maybe some corn--something green if I have it. Then I fill it up with gravy and put a top crust on. Oh one more thing, out a dusting of flour on the shell before adding the filling.
 
I don't have any recipes, but I can't help remembering the old post-Thanksgiving/post-Christmas Pizza Hut commercial that featured "Flaming Turkey Wings" (sung to the tune of The 12 Days of Christmas). :laughing:

Anyway, I'd toss the turkey and order a pizza!
 
Try turkey soup. We had some for dinner last night. Put in the carcass, carrots onions, garlic, celery parsely (dried is ok). Cover with water, boil, turn down heat and simmer as long as you can (2 hours at least). Take out carcass and shred meat off it into soup. Put in frozen yucca. Salt, Pepper. Heat and enjoy.
 
This is my favorite recipe, I make sure to have extra turkey to make it with. Take about 3 cups of rice and put in the bottom of casserole pan (this makes a small one, to do a 13x9, double recipe, I usually do). then put a few tbls of butter in a 2 qt pan over medium heat and add a few tbls of flour and mix in. Add 2 cups of milk and 2 chicken bullion cubes and bring to a low boil. mix in about 1 1/2 cups of cut up turkey and a can of mushrooms if you like them. Pour this mixture over the rice and top with shredded sharp cheese. Bake for about 25 minutes on 350. It's sooooo good. Sorry for the guestimates. I don't have an actual recipe, I always guess the amounts.
 
Turkey casserole: I use about 2 cups diced turkey. Boil some egg noodles and put the cooked noodles in a casserole dish with 1 can of cream of chicken soup (no water!) and 1/4 cup of milk. Mix together. Then throw in the turkey and an 8 oz. bag of shredded mozzarrella cheese in and mix it all together. Then I usually sprinkle another 1/2 a bag of cheese on top. Bake at 350 for 1 hour. I serve it with a salad and bread. Easy to prepare and delicious for leftovers!!

That sounds good, I think I will add in some brocoli.
 
For the first turkey casserole - do you cook the rice first b4 putting in the dish?
