Leaving tomorrow-need last minute planning advice

I will be heading to WDW tomorrow (Saturday) until Thursday with my 15 year old DS and my 60something mother. I have been to WDW many times, but for some reason, I am having some trouble planning for this trip. My DS will go on the thrill rides and my mom will wait or meet us later if needed. We understand that it will be hot and crowded.

Here are the plans......please add any advice or changes you can.

We plan on spending three days park hopping/one day at water park.
We are avoiding both am and pm EMH.
We will be at our morning park choice about 15 minutes before opening.
We will take an afternoon break then head back to another park (not EMH) in the evening.
We will decide on what major rides we want to do before entering and getting fast passes for them. (especially AM parks)

OUr park plans are:

Saturday-arrive/enjoy VWL
Sunday-MK (am)/Epcot world showcase (pm)
Monday-AK (am)/MGM (pm)
Tuesday-Typhoon Lagoon (untill we drop or a storm arrives)/DVC Block Party and DD (pm)
Wednesday-Epcot (am)/ MK??? (pm)
