Don't take Hwy 1 from LAX all the way to Anaheim. You'll be a bit disappointed as there are some long stretches that go right through the middle of cities where you can't see any sign of the ocean and you'll be fighting traffic lights and such.
Huntington Beach is nice and there are several nearby restaurants. I suggest you take the 405 fwy south from LAX and exit at Seal Beach Blvd south. It ends at Hwy 1 (PCH) where you can take a left (going south) toward Huntington Beach. If you go to the right instead you'll go towards Seal Beach (much smaller and a little quaint), but you'll be going the opposite direction from where you want to go. Stay on PCH for as long as you like. You'll start out going over Alamitos bay with the Seal Beach Naval Weapons Station to your left. You'll pass into Sunset Beach where there are a few "celebrity" homes right along the beach to your right. Then you'll enter the Huntington Beach area for the next several miles. Part of that stretch is a state beach and part of it is a city beach. You will come to Main Street and after that a couple of very nice hotels on the left. If you continue on, PCH moves inland a little and you'll enter Newport Beach but you won't have a view of the coastline for a few miles, until you get near Crystal Cove State Beach. If you choose to go that far, you'll cross Newport Coast Drive and the community where several more celebrities live and the home of Pelican Hill Golf Club. If you do choose to go even further south (by now you'll have to backtrack to get to DL) then you'll enter Laguna Beach and, eventually, Dana Point.
OK ... so you can probably have figured some of that out by looking at a map, but if you have any questions about any of this, just ask.
I would not suggest going down that far unless you have plenty of time. Based on your original post, I would suggest you take PCH down to somewhere near the Huntington Beach pier, find parking, walk along the beach and then walk up to one of the several restaurants along Main Street.
