flight is getting in at 10:30.

what late night options will we have at the resorts?

Your flight gets in that late figure app 1hr to get to resort check in and to room at least. Depending where you are staying it's going to be tough. Most resort lounges close about midnight

It will likely be after midnight when you arrive, so I agree it will be difficult to find anything open still.
If you're at the Grand Floridian, their counter service is open 24 hours a day though, with a late night menu.
That's it as far as I know for late night.

In your situation we'd probably order room service or perhaps an offsite pizza delivery, depending on how hungry we were.

We came in really late one evening, I think our plane landed around 10 or so. I had grand plans for stopping at DOwntown Disney and having drinks and a relaxing/late dinner. It sounded perfect on paper!

When we landed though; I was tired and ready to get into my hotel. The thought of parking, walking, and dealing with the crowds at Downtown Disney and THEN checking in to the hotel, was overwhelming. We ended up taking the rental car through a drive thru, and even that tried our nerves after a long day of travel, and a severly delayed dinner as a result of the flight.

that late, pretty much none unless you want to go to Downtown Disney/Springs. Most food service at resorts shuts down by 10/11 and lounges will close completely by midnight, although some resorts have a CS open later (but usually they close the grill, so no hot food available)
