Hokkien Noodles – KL style


I made this for dinner last night. Just as well - a friend called us about 30 minutes before I had planned to cook and said he was popping over. It's one of those dishes that is perfect for sharing and we fortunately had the larger packet of noodles. Normally we buy the smaller packet of about 400g noodles in it!


My starting ingredients:

  • Hokkien Noodles, 1 packet – 600 g
  • Fish cake, 1 packet – 200g, sliced
  • Fish balls, 2 packets – 200 g each, cut in half
  • Tofu puffs, 1 packet, cut in half
  • Choy sum (Chinese cabbage), 2 bunches, cut into 10 cm long pieces keeping the stem separate from the leaves.
  • Dark soya sauce, 6 tablespoon
  • Light soya sauce, 3 tablespoon
  • Water or stock, ¾ cup
  • Corn or plain flour, 1 teaspoon, mixed with a little water
  • Garlic, 2 cloves, minced
  • Ginger
  • Pepper
  • Vegetable oil, 2 tablespoon
  • Sesame oil, 3 – 4 drops

Soften the hokkien noodles by soaking in warm water for about 10 minutes.

Drain the noodles.

In a hot wok, fry garlic and ginger in the vegetable oil and sesame oil.
NOTE: I ran out of garlic and did not add any on this occasion.

Add the fish cake and fish balls and quickly toss in the hot wok for about 3 – 4 minutes.
NOTE: You can use chicken meat in this recipe. Just substitute one of the fish ball packets with some chicken meat.

Add the Choy Sum stems to the wok and toss for another 1 – 2 minutes.

Add the Tofu Puffs and toss for another minute.

Add the well-drained soften noodles and the soya sauces.

Toss the ingredients to mix until the sauce coats all the ingredients. Add the leafy greens and water and keep stirring for another 3 – 4 minutes.

Add the corn/plain flour and heat until the sauce thickens. Serve immediately.

Basically. They've gone fishing, though, so I'm home by myself, thankfully. Thinking about what to make for dinner.

It's very hot today :( So, yeah, I've been in my cave all day.

Probably a hot dog, burger, or pasta. We still have a ton of cookout type food left over from the party this weekend, and then there's pasta. So... Yeah. Not sure what I want to make. I don't want anything we have in the house and have no money.
 
If you have eggs, cheese, broccoli, butter, flour and milk, you could whip up a broccoli souffle...
 
Probably. I'm just not really in the mood to stand in the kitchen. We don't have central air in the house, just the window units in the bedrooms.
 
I better start getting ready for the day.....shower, breakfast etc. Catch you a bit later (not too much later, should be home today unless we make a snap decision to head out)

We have so much meat in our house, I need to start cooking and step it up. The fall is almost here when we get more meat. We have 3-4 turkeys, hams, corned beefs and Prime Rib roasts. Plus I found a 7-bone roast, 2 whole chickens and some chicken breasts & thighs.

We're having steak and potatoes tonight, but we're out of sour cream so we have to go to the store. We have to go to the pharmacy grocery store but they close at 5PM so I don't think we'll be actually going to the pharmacy grocery store and I will end up running up to the close store around 6PM when we're almost ready to eat.
