I see you Fly Ry and raise you Egg Foo Yung!

Start off with all the ingredients...

For the Egg Cakes
  • 4 Eggs
  • 1/2 cup chicken diced
  • 1/2 cup Zucchini Grated
  • 1/2 cup onion sliced
  • 1 cup Bean sprouts
  • 2 tbl flour
  • salt to taste

For the Gravy
  • 2 tbl canola oil
  • 2 tbl flour
  • 1 cup Chicken Stock
  • 2 tbl sherry
  • 1/4 tsp white pepper
  • 1 tbl Oyster Sauce

To make the gravy heat the canola oil over medium low heat, add the flour and whisk to make a paste. Add the remaining ingredients and stir occasionally until thickened.

In the meantime, heat canola oil in a wok over high heat, add 1/4 of the egg mixture and fry until lightly browned on both sides. Keep warm in oven while you repeat for the remaining cakes.

Place on a serving plate and top with gravy. Serve.

I've just had breakfast....but that egg foo yung looks great!


And, no bacon,...Kimmar....I had an eggs benedict, no pictures...I seriously thought of ordering the pancake lumberjack.with bacon. Next time!
