It's funny. I'm not a big fan of Coconut. Which is why the ones they made at the Food and Wine were so awful.
You have to use fine desiccated coconut.

These cupcakes are actually really good if you aren't a big coconut fan as it isn't surrounded by the chocolate and coconut...which for me isn't quite as good. But still very yummy
