Tomato, Mozzarella & Basil Salad



Ingredients:

2 tablespoons red wine vinegar
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon dry mustard
Generous dash black pepper
1/3 cup olive or vegetable oil
4 Italian plum tomatoes
6 ounces mozzarella cheese
8 to 10 fresh basil leaves


Preparation:
1. For dressing, combine vinegar, garlic, salt, mustard and pepper in small bowl. Add oil in slow steady stream, whisking until oil is thoroughly blended.

2. Slice tomatoes and cheese into 1/4-inch-thick slices. Trim cheese slices to size of tomato slices.

3. Place tomato and cheese slices in large, shallow bowl or glass baking dish. Pour dressing over slices. Marinate, covered, in refrigerator at least 30 minutes or up to 3 hours, turning slices occasionally.

4. Layer basil leaves with largest leaf on bottom, then roll up jelly-roll fashion. Slice basil roll into 1/4-inch-thick slices; separate into strips.

5. Arrange tomato and cheese slices alternately on serving plate or 4 individual salad plates. Sprinkle with basil strips; drizzle with remaining dressing[/FONT]

I wish I could get into scrapbooking like you are. My friend that was here for Easter dinner is the same as you. I have been buying stuff for scrapbooking since last August and I have this massive collection but I just can't get started. I think I'm "scrapbooking-challenged." I just don't think I'm that creative.

Thanks for the offer to stick them in an album for me. I may take you up on it one of these days. Of course, I actually have to find all my pics first!

the good thing about scrapbooks for those of us who start out "scrapbook-challenged" is that our families are afraid to say anything we do is bad, so we get such great compliments that we keep at it and then one day, we are actually kinda good at it it worked for me

I think the pic looks good. the way you were talking I was expecting the your whole head to be crazy!!! This really looks good. -- trust me I have students who try new hair colors and they haven't been able to get a nice contrast like yours without looking like a clown.
