good morning everyone!!!

we made it back from our short tour of the US late last night. I will post about it later for any poor souls that happen to be on line ;) Hope everyone is doing well, I gotta read back to get the 411 on how everyone is feeling.

I hope everyone had a wonderful Easter! We did!

Our friends came over for dinner and both of their sons ended up joining us! They are more like family to us than friends. They don't have family around here and we just don't have family :teeth: so we get together for most holidays!

Dinner was very good. Remember that new recipe I had for vegetable casserole. Well, it was fantastic. It could be used with just about any veggies. I used carrots, peas, celery and mushrooms. So if anyone wants the link again let me know. I highly recommend it! (Plus you can make it ahead and then just put it in the over for 30 minutes right before dinner.) - I wasn't thrilled with the honey-dijon asparagus. Would have rather gone with the hollandaise sauce.
 
The Easter Bunny was certainly good to us here. He even left a basket for Heather although she didn't make it home.

The highlight was that the Easter Bunny hid 216 (yes, 216!) eggs. :eek: Some were easy for A.J. but some were very challenging this year. They've found all but 1. I say they but it was mostly Matthew. He hunted all day.
 

My project for the day - I got new valances, sheets and a new bedskirt for our bedroom so I'm going to wash them and get them up/put on today. Plus, I had bought a beautiful quilt for our bed over a year ago when we were in Gatlinburg. When we got home a friend gave us a beautiful hand-me-down quilt so we started using that and I've never even taken the new one out of the bag! :sad2: So I'm going to wash it and put it on the bed today too! (Both the new comforter and the pillow shams have to be soaked in vinegar water to make the colors "sealed" and then washed and line dried. Sounds like fun!)
 
Today Allen and I are celebrating our 24th anniversary. :cool1:

He has to work part of the day. He has to go in around 12 and the Sheriff's Office has to present their budget requests for the department to the county manager at 3. The Sheriff has told DH that since it's our anniversary he can present his portion of the budget request for his department first and then he'll be free to leave after that part of the budget meeting. We'll see about that. Knowing DH he'll want to stay until the end of the meeting, which is fine.

There has been talk that a certain DH is going to take me to Outback tonight! (Just he and I - no kids) :yay:

What can I say...we're a crazy family! :lmao: We just save any of those plastic eggs that the kids "acquire" year to year and then most of them end up getting hidden the next year! It makes for an interesting day!


Wow soaked in vinegar. I have never heard that. Sounds like fun.

Something about the vinegar "seals" the colors so that they have less of a chance of running or fading. This quilt has some dark marroon and dark blue in it so I certainly want to do all that I can to make sure the colors don't run!

on Saturday night, my mom, sister, and i made these awesome cookies...
it's really cute, but i don't think they taste that great...
it's better for little kids...
here it is...

To be made the evening before Easter

1cup whole pecans
1tsp vinegar
3 egg whites
pinch salt
1 cup sugar
zipper baggie
wooden spoon
tape
Bible

Preheat oven to 300 degrees (this is important, don't wait till you're half done with the recipe!)

Place pecans in zipper baggie and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested, He was Beaten by the Roman soldiers. Read John 19:1-3.

Let each child smell the vinegar. Put 1tsp vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross, He was given vinegar to drink. Read John 19:28-30.

Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11.

Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke 23:27.

So far, the ingredients are not very appetizing. Add 1 cup sugar.

Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Read Psalm 34:8 and John 3:16.

Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. Read Isaiah 1:18 and John 3:1-3.

Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matthew 27:57-60.

Put the cookie sheet in the oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matthew 27:65-66.

GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed. Read John 16:20 and 22.

On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb open and empty. Read Matthew 28:1-9.

NOTE~don't use too much vinegar otherwise you'll still taste it...
