Last Minute Planning -- Need Ideas

Here's the story. Our trip later this week was supposed to be only 2 days in the Disney Parks (1 day MK; 1/2 day MGM; 1/2 day Epcot) and 1 day at Sea World. The rest of the trip was to be spent in South Florida, but the aftermath of Hurricane Wilma is keeping the South Florida family up North and the South Florida part of the trip is now cancelled. With a little pixie dust, I was able to snag additional nights at Disney hotels. It will require some jumping around, but it looks like I've got my hotel ressies all lined up.

Not such a bad problem to have, right? I went from 2 days in Disney to 6 days. Believe me, the kids ain't complaining. My bank account, however, is another story.

Here's the dilemma. Like most of you, I'm a bit nuts when it comes to planning. Other than the ADRs I made at 7:00 a.m. on the 90th day for the 2 days I knew I would be in the parks, everything else is wide open. Normally for a trip of this length I would have 2 ADRs/day lined up, ressies at Hoop Dee Doo or La Nouba, Fantasmic Dinner Package, a princess breakfast, a fireworks cruise, a character meal, a priate's cruise, etc. I've checked on all the above, and nothing is available that I want.

Of course, there's plenty to do in the parks that do not require advance reservations. Please put my mind at rest and share your ideas. We are a family of 5 with DS7, DS5, and DD3. I leave in 3 days ... HELP!!
 
I would think you'd still be able to snag an ADR or 2 more somewhere. Maybe try someplace new you hadn't thought of before.
Also, if you weren't planning on it - now you'll have time to enjoy the Food & Wine Fest at Epcot. You can make a meal out of trying various foods and desserts from around the world.
I'd think of possibly doing some of the "little things" you may not get to on a regular trip. How about taking time to really enjoy your resort, possibly a waterpark, renting a pontoon boat and taking a ride from DTD to POR and back. The petting zoo at Ft Wilderness and the campfire movie.
There are also so many "non-Disney" things to do in Orlando. You were already planning on a 1/2 a week outside of Disney. How about a dinner show like Medevial Times or the Dixie Stampede? Possibly spend 1 day at that other park (gasp!! Universal).
These would all be things you'd still be able to do and work into your schedule w/o worrying about "room" or availability.
