Lasagna - how do you make yours?????

My Italian MIL makes teeny tiny meatballs for her lasagna. They are worth the time it takes to roll those little meatballs and so cute too LOL
Last time I made it like that I used about 1/3 of a pound of meat to make them.
I bake the meatballs first then add to the sauce.

DH, after watching a cooking program, does a great Paula Deene impression, "and if you don't have ricotta cheese, you can always use cottage cheese!" :sick: And where I live, ricotta only has two syllables. I think I will make some for dinner - I have some sauce in the freezer. Mine is simple, because the kids like it meatless, so just pasta, sauce, mozzarella, ricotta/egg mixture, and some seasoning.

ETA, I also add some romano cheese, freshly grated - no box of cheese here.
 
Lasagna is a difficult thing to make for myself... so I tend to go the frozen route. I don't make it for myself very often and it's frequently what I'll get when I do out to dinner.

However... this is the mash-up of two different recipes I used when I had a party not too long ago: Lasagna Roll Ups. They were DELICIOUS! (And yes, that is a shameless plug of my blog ;) )

For myself, I will very likely use the original lasagna roll up recipe since it's only a small serving size.
 
I have made it with meat in the sauce and without. I don't really like meat so I prefer it without but my family likes the meat sauce. I actually just made it last Sunday for my daughters birthday party. I made two one with meat sauce and one without. Like I said it is not your typical lasagna but is similar and so easy to put together and very good. Good luck, let us know how you liked it if you decide to go this route!

Us too, and mozzarella has 3!:laughing: Anyway, once I had lasagna with pepperoni slices in it...now that was yummy but greasy. I have also used the no-bake noodles and they work fine in a pinch. Otherwise, I use Italian sausage, ground beef, ricotta (beat an egg into it), mozzarella (slices, not shredded), and sauce, layered...usually 3 layers.
 
Simply say wife, make lasagna... :confused3
 
Please don't laugh, but I really like the Stouffers Lasagne. It's not bad on fat and calories, is make with no preservatives, and it's an easy dinner.

I tried that once (had a coupon), and my kids, who love stouffers mac and chhese, wouldn't touch it.

I made 2 trays of lasagne, so WOAS, my family is grateful for this thread!

I don't care for Stouffer's lasagna either, not enough ricotta, and the sauce is to sweet and bland. But have you tried the Stouffer's Chicken and Broccoli Pasta bake. It's soooo good. Terrible for you, but really good.:laughing:

No, I haven't - I will try it (my mac and cheese lovers also love broccoli and chicken). I actually like stouffer's veggie lasagna, but I don't know if the kids would go for that. We never use jarred pasta sauce, so we find the stouffer's too sweet, too. My kids also like real baked mac and cheese, with cheddar and a white sauce.
 
And to the pp who mentioned how to drain the pasta to avoid sticking, OMG, you have just added a regular meal to our menu. I have one with celiac, so I have always made her lasagne separate, because the gf noodles stick like crazy, and I have to piece them together. Ironically, because of your tip, hers came out awesome, and since I accidently bought the no boil ones for the rest of us, hers was actually better! From now on, I'm just making one big gf lasagne (same as my mac and cheese).
