You know, I would call Disney Food & Beverage and ask to speak to a manager. I'd discuss concerns and options for your child since she has specific needs.
If you have ADRs, the chefs can be alerted and plans made. I have another friend whose sister needed a very specific diet, and each WDW restaurant worked with the sister.
By the way, I hear your concerns! DS has grown out of his "chicken finger only" phase, but I was QUITE livid to find out that WDW had removed the breaded chicken fingers from its menu for a time last year. He has a severe receptive language delay, and just could NOT understand why every other restaurant in the world serves chicken fingers, but the KING of kid's places didn't.
I did call and talk to the manager at one restaurant at WDW (Olivia's) that had removed the item, and told her basically, that it was a pretty terrible idea. She said that because the had the item in their counter service restaurant, DS could still order them.
And when we were at Olivia's two weeks ago, the regular chicken fingers were back on the menu there. So they do listen to feedback!
