Kids-Free Night Out Ideas

My hubby and I are looking forward to our first trip to Disney as a family - I haven't been in 12 years and he hasn't been in 25 years! My parents are going as well, and will be watching the kids for us one night so we can have a date night. Any recommendations on good places to go? Dinner theaters open after the parks close? Anything cool that is definitely not-miss?

A little info on us - my hubby has been gone from the family on military deployment since January and this trip is his welcome home gift for us all. We enjoy doing cool, off the wall things, and are not really bar people.

Hope you guys have some great ideas to share! I want to make this date night really fun and special.
