Kid's Club vs Kid's freedom question

You can't leave the park though - you'd have to stay in the same park as the kids. Just clarifying.

Absolutely not the case. They just have to be 14 to enter alone. They can be alone in the park (i.e. they are old enough to ride single rider) at the age of 7. There is no rule that says that supervising adults must be present in the same park.
 
My husband and I actually got married in December and our anniversary will be during the trip. Usually we don't do anything for it, since it's so close to Christmas. Neither child seemed remotely interested in sitting through a long lovey-dovey mommy and daddy dinner. I just would feel really bad leaving them in the room for some reason. I know that my daughter will be able to handle her brother, since she has been doing it 4x a week without incident. Of course, babysitting at home is very different then babysitting at Disney World, I imagine. I will definitely add in to the plans to test it out first and see how they feel at Epcot in the early evening.
 
It sounds like a nice way for all parties to spend the evening. If my older was watching my younger child that much at home, I don't think I'd have any qualms at all about them spending a couple hours at a Disney park. I'd probably prefer that over staying at the resort actually.
