As someone newly on dialysis and visiting Disney this Christmas, am wondering what my best eating options will be aside from making food for myself.

Speak with your nephrologist, or nurse, or social worker. Or a nutritionist.
Determine your actual dietary restrictions.
Include your restrictions when you make ADRs.
No or low sodium.
Little or no potassium - bananas, potatoes...

My DM has health issues not related to the kidney where she can barely have any salt and Disney is so wonderful accommodating her. We pretty much eat all meals at TS including buffets and dinner shows. Usually they have some type of meat or fish that has not been marinated that they can cook with no salt spray with steamed vegetables. Last trip we stayed at POR and at the food court they could make fresh eggs special for her in the back. My DH can’t have dairy or any hot spice like black pepper and they do great for him as well.

If you give Disney specifics (i.e. low salt, etc.), they will do everything they can to accommodate you or steer you in the right direction (like at a buffet).
