Does anyone know when lunch happens? I'm hoping it's the very last thing on the tour so we can skip it.

It is not last but in the middle, about 11:30-12:00 depending on your tour time. It is 20-30 minutes long and usually Pecos Bill's or Columbia Harbour House. Your food is pre-ordered and will be ready when you arrive and you will sit in your own section.

You can not skip lunch on the tour.

You've paid for the lunch so you might as well eat it. Plus there's a lot of walking and you'll be happy to sit for a bit. Also gives you the chance to ask the tour guide some more questions.

Our group was glad to have a place to rest and eat for a while in the middle of the tour. It is a lot of walking and standing, so you won't be able to skip it. Just enjoy the rest and food. We ate at Columbia Harbor house and sat upstairs - very enjoyable and good food

If you skip lunch/leave when it happens, you'll miss the 2nd half of the tour.

When we took the tour we had to pre-order our meals when we checked in the morning & it was served to us over in the empty space area in Tomorrowland. It was pretty efficient time wise, a good bathroom break & didn't take much time from the tour.

Is there a reason you want to skip lunch?

I am doing the Marceline to Magic Kingdom tour which seems to be Keys to the Kingdom light. It doesn't include lunch, if it is specifically that you don't want the lunch.
