What are some of your equivalents that you've used when you make a bbq sauce with brown sugar and ketchup? I'd like it a bit more sweet than sour. I cooked a pork roast late yesterday and pulled it apart last night to make bbq with it for tonight. The roast was old and needed to get cooked and good thing I'm doing this because it was not very moist after it cooked. But this should moisten it up some and be yummy I hope.

Thanks

I'm not sure what you mean - equivalents? Do you want to substitute something for the brown sugar?

No, like how much brown sugar and how much ketchup - 1 c. ketchup and 1/2 c. brown sugar????

Sorry - I'm not going to be much help then. :( That kind of thing I just add stuff "until it looks right" - having learned that method at my grandmother's knee. Since nothing you'll be adding can't be consumed w/o cooking, you could just keep tasting I guess.

I'm guessing that I use about 1/4 cup brown sugar to 2 cups of ketchup. I probably add 2 Tbl mustard, 2 Tbl Worcestershire sauce & 2 Tbl vinegar as well. I don't make things on the sweet side, though.

I remember the recipe we learned in Home Ec in junior high for Hamburger BBQ (Sloppy Joes) was a cup of ketchup & a tablespoon each of everything else except salt & pepper. Whenever I make BBQ stuff, I always use approximately the same amout of brown sugar & vinegar too.

Well that was dumb! I have recipe from Flame Tree BBQ at AK! Their ratio of ketchup to sweetener is:

1 c ketchup
2 Tbl molasses
1/4 c brown sugar
1/4 c rice wine vinegar
There are other ingredients too.

That does help Deb - thank you very much.

You're welcome! :teeth:

I forgot to say how good that sounds! We're having left-overs AGAIN! (turkey)

Well I did it but I think I used too much brown sugar. But it was fine. DD said it was too sweet and dh ended up not being able to eat it but added his own stuff to some meat I left out. I didn't have as much ketchup available as I thought I would but it worked out fine.

Thanks

I'm sorry it didn't turn out too well for you. :( I don't like things sweet either - which is a good thing since I can't have them anyway. ;)

Did you add vinegar to it? DS hates the smell of it & would complain if he thought I was putting it into something, but his favorite meal for years was sloppy Joes. I never told him that it had vinegar. I think it really needs it to offset the sweetness - but then I'm PA Dutch & am used to the sweet/sour thing.
