I have been a lurker for about 3 years now, but I just returned from my 3rd trip in the last 2 years.
I found the opposite of this true on Sat mornings (the 9th specifically on recent trip). We were able to get through Stitch, Buzz (2 times due to an infant), Space, Teacups, Pooh, SW, Philharmagic, carousel, and IASW in about an hour and a half this was with 3 children that were all 6 and younger! We even missed the rope drop that day. It was awesome. We were eating lunch by around 11 AM and had done so much. We have never been so productive at a park in such a short time.
I returned with DD 6 that night for Specto/Wishes. When Spectro was delayed we walked on Splash 2 times and still got to watch the parade and great seats for Wishes. Then went back to Splash for a couple of more no-wait rides. (It too is the ride of choice for the family!)
Other days MK was packed by noon and waits of 60 min for Splash by then. But I kind of think the Sat being packed by floridians is a myth. The floridians I talked to were there for long trips and not just weekends.
We did choose to stay away from all EMH at any park and we were fine - all waits were very short at the parks for us in the mornings! We too were aftraid after reading the boards about the crowds. The worst day was the 12th in any park and that was MK it was packed that day, but since we only had to hit the ones the kids really wanted to do again it wasn't a problem.
Maybe this will help someone else plan their trip! Maybe it was just an odd day, but then again maybe not - who knows!
