I have honestly never looked at crowd calendars before and I'm a little curious not after looking at them. My next trip is scheduled from sept 28-oct 5. My only previous trips were:

1) Christmas-New Years 1998 (I was in HS at the time)
2) Spring Break 2005 (I was in college then)
3) Star Wars weekends 2009 (for college graduation)
4) Star Wars weekends 2011 (because why not? I love Star Wars)

It seems like crowd levels are listed as near the top for the time of the year I've gone before and significantly lower for then time of year I'm going this time. Will I really be able to tell the difference? Is 8 days too long for this time of year? Also, if it will be less crowded and won't take as long, would it still be hot enough to upgrade to include the water parks? It will just be me and BFF so no kids.

There will be a very noticeable difference. You'll get more accomplished so you could do things twice or more around the resorts/downtown, etc... Ive never been to the waterparks so don't know if they are good for adults without kids or not.
 
I can't speak for the crowd level difference since I've only been once and that was just 6 wks ago. However, we were in Orlando October 5-12 2013 at Universal and it was still hot. One day was so hot and I complained and I live in South Carolina. The other days were still very warm with the occasional shower. We really enjoyed the water parks as well. I preferred Typhoon Lagoon. Blizzard Beach was fun, but there were way too many steps to reach the slides and I'm in good shape. TL was just prettier and more relaxing. Our favorite ride was the crush n gusher. Super fun!
 
Yes, there will be a significant difference. The parks won't be empty by any means, as the promotions Disney offers is bringing crowds in during previously very slow days. With your prior experience during peak times you should be able to accomplish a lot. Whether 8 days is too much will depend upon your individual preference.

It will probably be plenty hot for the waterparks at that time of year. I guess there is no certain way to predict it, and we are having some rather strangely cool weather so far this summer. Generally, September into early October is still pretty warm for those of us that live in cooler parts of the country. It is smack in the middle of hurricane season, so you just really never know what will happen. ;)
 

We have gone 4 times in the last 6 years in September. Growing up, we always went during spring break. There is a very noticeable difference in the crowds! As someone else mentioned, the parks won't be empty, but you will more than likely be able to ride many things multiple times during your upcoming trip.

As for the weather, yes, it will still be hot/warm enough to go to the waterparks. We always add the waterparks and more piece to our tickets (along with the park hopper). The water parks have a great mix of attractions for all ages, so I don't think you need to worry about not having kids with you. There is plenty to do! :)
